Fajitas, Tomatillas,
Margaritas,Oh My!
September/October
This is no ordinary Mexican food dinner but an event featuring music, artisans and Santa Fe style new southwestern cuisine.
We will have a marketplace with vendors of western and vintage wear, jewelry and art.
There will be grilled beef and pork picadillo for fajitas, red snapper achiote in banana leaves, tacos de huitlacoche and chicken with peach green chile to name a few of the wonderful new southwestern dishes.
There will be a special tasting of tequilas and we will serve horchata, margaritas and maybe some Mexican chocolate.
All of this will be under the open sky with classical and Spanish guitar music played by Alan Skowron.

We will feature a variety a tasty foods such as pork loin with fig jam, chicken roulade, grilled salmon with , ravioli with butternut squash, garlic green beans, salad of field greens, gorgonzola, candied pecans and smoked tea vinaigrette, crostini with sweet onion tapanade and lemongrass ginger ale.

We will be firing up the grill and serving our fabulous fajitas of chicken and beef, grilled onions and peppers, rice and beans, three zesty salsas and mango, jicima and cucumber salad.

Satori Grill will be serving the hors d' oeuvres for both receptions on this most festive and important evening.
The menu includes:
Sweet onion and balsamic tapenade and goat cheese crostini
Lobster and prosciutto crostini with garlic herb butter
Hickory/cherry grilled salmon with fruit and horseradish salsa on puff pastry
Skewer of chorizo, red pepper and apple
Parmigiano-reggiano crisp with goat cheese mousse
Hickory/cherry grilled salmon with fruit and horseradish salsa on puff pastry
White truffle infused custard with morel ragout served in eggshell
Spicy grilled shrimp with black bean and avocado salsa
